Thursday night at the bar with no sign. Malèna has just taken the stool next to Joe and is looking around for a menu.
Joe: 第一次来?这里没有菜单。你想喝什么,跟调酒师说就行。First time here? There's no menu. Whatever you feel like drinking, just tell the bartender.
Malèna: 我不太喝酒。有没有不太烈的?I don't drink much. Is there anything not too strong?
Joe: 那来一杯鸡尾酒吧,不太烈的那种。我请你。Then have a cocktail, the not-too-strong kind. It's on me.
Malèna: 你请我?我们才认识五分钟。You're treating me? We've known each other for five minutes.
Malèna: 好吧。那……为五分钟干杯。All right. Then… to five minutes.
Notas culturales
A birthday dinner for Joe's friend in Shanghai. Everyone stands, glasses up, and shouts 干杯! Anya has a full glass of beer. What does 干杯 literally ask her to do?
Empty her glass.
In mainland China, 干杯 literally means "dry the glass". Among young friends it often just means cheers, but at a formal dinner someone may expect you to finish it. If you don't want to, say 随意 ("at my own pace"): it's polite, and nobody should push you after that.
Dilo como un local: 我酒量不好,我随意。 — I can't hold my drink. I'll just sip.
Same dinner. Joe's friend's father, a man in his sixties, raises his glass to Joe. As they clink, where should Joe hold his glass?
A little lower than the older man’s glass.
Across mainland China (and the wider Chinese-speaking world), you clink with the rim of your glass a little below an elder's or a boss's to show respect. Often both people keep lowering their glass, a polite little contest. Add 您, the respectful "you".

The dinner ends. Two of the friends grab for the bill at the same time, both talking loudly, and one hurries off to pay at the counter. What's going on?
A friendly ritual: fighting to pay shows generosity.
In mainland China, 抢着买单 ("fighting to pay") is a normal, warm ritual. People sneak off to the counter or scan the QR code first. Whoever loses usually treats next time. If someone is clearly the host, a short polite protest is enough: let them win.

A friend's wedding banquet in Shanghai. The bride and groom go from table to table, glasses raised. They're two tables away. What should Joe and Anya do when the couple reaches their table?
Stand up, raise their glasses, and wish the couple well.
敬酒 is going round to toast people. At banquets in mainland China, the hosts toast each table in turn; guests stand, raise a glass and add a good wish. Tea or juice in your glass is fine. Red envelopes are usually handed over when you arrive, not during the toast.

Anya asks a Shanghai bartender for "Chinese white wine", expecting a glass of Chardonnay. He pours a tiny glass of clear spirit that smells very strong. What is 白酒?
A strong spirit distilled from grain, often around 40–60% alcohol.
白酒 (baijiu) is mainland China's grain spirit, often made from sorghum, and much stronger than wine. It's drunk in small glasses, mostly at banquets and toasts. In a bar or with barbecue, 啤酒 (beer) is the easy everyday choice, and saying you'll stick to it is perfectly polite.
Dilo como un local: 白酒太烈了,我还是喝啤酒吧。 — Baijiu's too strong. I'll stick to beer.
